Last night we had a big dinner at the farm. Kale pie was on the menu. It was created for us by the head chef (Kathy) of one of our excellent restaurants in town, Foodscapes. It was delicious!
Kale has the highest Lutein content of any veggie. My opthamologist says Make a Kale Smoothie every day! KALE NO - Gross! I'd rather have a delicious glass of dried turnip green tea or some fantastic Antioxident pills - both with the highest quality ingredients from www.jenksfarmer.isagenix.com
Back in March 09 Martha Rose Shulman had a week of recipes using kale in her Recipes for Health series in the NYTimes. My favorite is the Provencal Kale and Cabbage gratin (march 7). She also featured kale in a Sept. 17 recipe called stir fried pork with greens and noodles, with recommendations for using tofu, etc if you did not want to use pork. We love both of these.
